Teriyaki Ostrich Sate

Soak wood skewers in cold water for 2 hours. Take 1 lb of ostrich steak and slice into 3″ x 1″ strips. Thread on skewers lengthwise and refrigerate until marinade is ready.

Marinade: 1/2 cup soy sauce, 2 tbsp. honey, 1 tsp. chili flakes, 1 tsp. turmeric. Combine all ingredients and pour over steak. Refrigerate 1 hour. Grill to medium rare and serve with a variety of sauces.
