Teriyaki Ostrich Sate

Soak wood skewers in cold water for 2 hours. Take 1 lb of ostrich steak and slice into 3″ x 1″ strips. Thread on skewers lengthwise and refrigerate until marinade is ready.

Marinade: 1/2 cup soy sauce, 2 tbsp. honey, 1 tsp. chili flakes, 1 tsp. turmeric. Combine all ingredients and pour over steak. Refrigerate 1 hour. Grill to medium rare and serve with a variety of sauces.

Taco chip surprise!

Brown 1 lb of ground ostrich. Add 1 can of chili without meat.

Place nacho chips on serving platter and pour meat mixture over.

Sprinkle with grated cheddar cheese, chopped onions and hot peppers.

If desired, microwave to melt cheese.

Ostrich Stir-frys

Ostrich meat is quick cooking for stir-fry’s. We suggest an ostrich tip, marinated if you like. Cut into small 1″ pieces & don’t overcook!

1 Ostrich steak or tip. 1 Spanish onion, cut into small chunks. 1 tbsp. Soya sauce. 1 tbsp.dry sherry. 1 red pepper, cut into strips. 1 green pepper, cut into strips. 1 can consommé. 1 tbsp. corn starch. 2 tbsp. olive oil.  Salt & pepper.

Heat skillet over medium heat. Add olive oil & stir-fry ostrich meat until medium done. Add onions, peppers, soy sauce, sherry and consommé. Mix cornstarch with a small amount of water to make a paste. Add to mixture and heat till sauce is thick. If you like red wine add a splash!.

Serve over rice or wide egg noodles.

Peppered ostrich steak

This is delicious served with pasta or garlic mashed potatoes.

1 Ostrich steak.  1 tbsp., black peppercorns, cracked2 tsp., salt, divided.  2 tsp., olive oil3 garlic cloves, chopped.  1 red onion, sliced2 tsp., sweet paprika.  ½ tsp., dried thyme3 tbsp., all-purpose flour.  1 ½ cups milk1 cup beef or ostrich stock.  2 tsp., Dijon mustard

Rub peppercorns and 1 tsp. of salt over both sides of the steak. In a large skillet heat 1 tsp. of olive oil and cook steak until medium done (about 3 minutes per side). Put aside and keep warm. Add remaining oil to pan and cook garlic, onion, paprika and thyme until softened. Add flour and stir for about 1 minute. Add milk, stock, mustard and remaining salt and cook for about 5 minutes until thickened. Slice steak thinly and arrange on platter. Pour sauce over and sprinkle with parsley.

If you like more pepper feel free to adjust recipe.

Ostrich pasta with spinach and mushrooms

1 ostrich steak, sliced. 2 tbsp. olive oil. 3 garlic cloves, chopped. 1 onion, chopped. 4 cups sliced mushrooms. 1 tsp. dried thyme. 2 tbsp. all-purpose flour. 2 cups milk. 2 cups chopped fresh spinach. 2 tsp. dried basil. salt & pepper to taste. Parmesan cheese.

In a large skillet stirfry thin slices of ostrich steak to medium done in olive oil. Remove from pan and set aside. Add more oil if necessary and cook garlic, onion and thyme for about 1 minute. add mushrooms and cook another 5 minutes. Sprinkle with flour and cook for 2 minutes. Gradually add milk and bring to a boil and cook until thickened.

Stir in spinach, basil, salt & pepper. Cook until spinach is just wilted. Add cooked ostrich steak.
Cook about 12oz of your favorite pasta (rigatoni works great), drain and toss with meat mixture.  Serve with a fresh tossed salad, French bread and grated parmesan cheese.

Easy meatball appetizers

Mix 1 lb of ground ostrich, add 1/4 cup of breadcrumbs, 1 slightly beaten egg, 1tsp. garlic powder.

Form into meatballs and cook until done in 2 tbsp. of olive oil.

Mix together one jar of grape jelly & one jar of chili sauce.

Add meatballs and warm.

How to Cook an Ostrich Egg

The season for fresh ostrich eggs in Ontario is from April to September. As most Ostrich Farmers incubate the eggs, it is best to call ahead to the farm of your choice to reserve a fresh egg.

To keep the shell for painting, drill a 1/4 inch hole and shake contents out…great for scrambled eggs keeping in mind that an average Ostrich egg is worth 24 chicken eggs. Use any recipe that you would normally use.

Some people like the idea of no antibiotics or growth hormones, so will do the above and put the mixed egg ( uncooked ) into ice cube trays, cover with saran wrap and freeze. Use two cubes for one egg in recipes.

If you want to do an ” over easy” egg, make sure your pan is large enough!. Take a small hammer and crack the egg, than put in pan, cover and cook from 30 minutes to 45 minutes depending on heat.
